Lemon, ginger, turmeric and pineapple
Ingredients
Juice of 2 large lemons
1 thumb sized piece of ginger - juice or grate
1/4 tsp of pepper
add a thumb sized piece of fresh turmeric or 1 tsp of turmeric powder
raw honey to taste (optional)
1 glass of coconut water
couple of pineapple chunks
Method
I usually factor the ingredients up and blend everything together, including the skin of both the ginger and turmeric. I also peel the lemon and blend the whole thing. Don't worry if you don't have exactly the right quantities.
I strain the liquid and bottle up and then I freeze the pulp ice cube trays and add it to curries or to scrambled eggs. There's so much goodness in the pulp - waste not!
