Sugar Free Snacks - Peanut Bites

Makes about 20 little bites


Ingredients

200g dried fruit (combination of dates or figs)

100g crunchy peanut butter

40g buckwheat flour or you can use ground oats

40g sunflower seeds

40g pumpkin seeds

2 tbsp melted coconut oil

2 tsp water


Just blend everything together until you get a crumbly texture. Then bring everything together form a doughy like mixture and then make little balls or bites. I love making these with kids as they enjoy getting involved and the textures.


Once you've got them into little balls you can eat as is or sometimes I melt some dark chocolate and coat a few of them. It gives them an extra richness.


These are sugar free and are great for kids lunch boxes or as a snack when they're back from school. These can be kept in the fridge for about a week.


And a few of the health benefits

Sunflower and pumpkin seeds are nutrient-dense, supporting heart health, digestion, and immune function. Peanut butter is a source of protein, aiding muscle growth. Buckwheat flour is gluten-free, high in fibre, and packed with antioxidants. Figs offer fibre, antioxidants, and minerals, supporting digestion and bone health. All provide essential nutrients and various health benefits when consumed in moderation.


Dark Chocolate

Just to add in some antioxidants and flavonoids which have been know to improve heart health by lowering blood pressure and cholesterol, boost brain function and mood, and enhance skin health. It may also support weight management, improve insulin sensitivity, and provide essential minerals like iron and magnesium. However, it should be consumed in moderation, with a preference for varieties with high cocoa content (70% or more).
